For a (PET) injection moulded craft knife case, are there any any other viable manufacturing processes?

You mean a storage case for craft knives?
Injection moulds are of necessity complex, expensive and heavy.
Alternatives could be blow moulding (but depends on design, and still requires a heavy mould), or vacuum forming.
The latter is the cheapest process.
